Gather your ingredients.

  • enough for one pint jar — Carrots — peeled into fine ribbons
  • 1 teaspoon — Fresh ginger — thinly sliced
  • 1/2 teaspoon — Coriander seeds
  • 3/4 cup — White vinegar — labelled 5% acidity
  • 3/4 cup — Water
  • 2 1/4 teaspoons — Canning or pickling salt
  • 1 1/2 teaspoons — Sugar

Prepare.

Peel carrots into thin ribbons with a vegetable peeler.

The method.

    Prepare thin carrot ribbons and clean the jar.

    Pack carrots, ginger and coriander into the jar.

  3. 03

    Prepare the recipe brine as specified by the cited source.

    Pour the hot brine over the carrots, fit the lid and refrigerate promptly.
