Gather your ingredients.
- enough for one pint jar — Carrots — peeled into fine ribbons
- 1 teaspoon — Fresh ginger — thinly sliced
- 1/2 teaspoon — Coriander seeds
- 3/4 cup — White vinegar — labelled 5% acidity
- 3/4 cup — Water
- 2 1/4 teaspoons — Canning or pickling salt
- 1 1/2 teaspoons — Sugar
Prepare.
Peel carrots into thin ribbons with a vegetable peeler.

Prepare thin carrot ribbons and clean the jar.

Pack carrots, ginger and coriander into the jar.
